Here’s something to ruin your new years diet!… Stout cookies, the perfect beery way to beat the January blues!
Prep time: 20 mins
Cook time: 15 mins
225g unsalted butter, at room temp
200g (1 cup) White sugar
200g (1 cup) Brown sugar
125ml (½ cup) Stout (We used Sadler’s Mud City Stout)
600g (2½ cups) Flour
75g Cocoa Powder
2 tsp Baking Powder
½ tsp salt
Preheat oven to 180ºC (fan).
Whisk together the butter, sugar, eggs and Stout until the mixture is light and fluffy.
Sieve and mix together the flour, cocoa, baking powder and salt.
Slowly add the flour mixture to the butter mixture until thick and dough-like.
Drop tablespoons of dough onto a greased tray.
Bake at 180ºC for 15 minutes.
Take out of the oven and leave to cool for 10 minutes.
