Cooking with beer Steak and Ale Pie

This is an amazingly simple and is perfect for cooking while entertaining guests. It is by far one of the greatest and most traditional beer dishes to have ever been created!Serves: 4 | Prep time: 20 mins | Cooking time : 1hour20What you need400g stewing steak, diced25g flour, plus extra for dusting100g butter2 onions, chopped2 cloves of garlic, chopped2 carrots, chopped6 mushrooms, chopped2 sprigs fresh thyme400ml good ale500ml beef stockSalt and pepper1 egg, beaten for glazing300g ready-made rolled puff pastryDirectionsPreheat the oven to 220°C/425°F/Gas Mark 7.Mix meat with the seasoned flour.Heat half the butter in a heated pan. Add the meat, sear until golden brown.Add the vegetables, herbs, ale & stock. Bring to a simmer, then cover with a lid and gently simmer for 1 hr. When cooked, season, add the remaining butter and pour into an ovenproof serving dish.Brush the edge of the dish with the beaten egg. Roll out the pastry onto a lightly floured work surface and place over the dish. Pinch the edges of the pastry onto the edges of the dish. Beat the egg and brush over the top of the pastry and place in oven.Bake in the oven for 20-30 mins until the pastry is golden brown.
