Malty Chocolate Beer Cupcakes

Serves 12 - Cooking & prep time 30 minsWhat you need¾ cup (100g) plain flour¼ tsp salt1 cup (100g) cocoa powder2 tbsp butter or margarine (melted)2 eggs2 tsp baking powder½ cup (125g) plain nonfat Greek yogurt1 tbsp vanilla extract2/3 cup (125g) sugar½ cup (120ml) malty beer (we used Innis & Gunn Rum Finish)DirectionsPreheat the oven to 350°F. Sieve cocoa powder, flour, baking powder, and salt together in a bowl. In another bowl, whisk together the butter, eggs, and vanilla. Stir in the Greek yogurt until smooth. Add sugar and stir in. Then stir in the flour mixture and beer, alternating between the two, beginning and ending with the flour mixture. Divide the mixture between cupcake cases and bake at 350°F for 20 minutes, (to check that they are cooked insert a wooden skewer into the centre, if it comes out clean it’s good to go!) Once cool you can add butter icing, chocolate sprinkles, rainbow sprinkles, even yeti-blue sprinkles!
