Thatchers Cider Pulled Chicken Burgers, Sage onion rings & Hazy Ketchup

This one is adapted from a recipe sent to us from Thatchers. It's definitely worth a shot for the summer and it tastes just as good as it looks.Thatchers pulled chicken burger with Somerset Haze ketchup and onion rings by Tim MaddamsServes: 6-8 What you need for the Marinade1/2 bottle of Thatcher’s Somerset Haze Cider1 tsp of smoked paprika1/2 hot chilli, finely chopped2 tbsp of honey1 tsp coriander seeds1tsp cumin seedsDirections for the MarinadeHeat the cider in a saucepan, add the honey and chilli.Toast and crush the whole spices, add these and the smoked paprika to the warm cider mixture.What you need for the Ketchup1 big pinch of ground allspice2 garlic cloves1/2 tin of tomatoes, sieved1/2 bottle of Thatchers Somerset Haze cider2 tsp of vinegarDirections for the KetchupPut all the ingredients in a pan and simmer until reduced to a thick, soup like consistency. Remove from the heat and season.Like it hot? add the other half of the chilli to the Hazy KetchupWhat you need for the Onion Rings1 onion sliced thinly into rounds4 sage leaves finely chopped1/2 cup of milk1 cup of plain floursalt and pepperoil for fryingDirections for the Onion RingsHeat the oil in a pan, when a piece of bread dropped into the oil it should go brown and golden within one minute.Place the onion rings and chopped sage in a bowl and moisten with the milk.Drain and dust in the flour before frying until golden and crunchy.Remove the onion rings from the cooking oil and drain well on kitchen paperSeason and serve.
